Gigi’s Sydney are sort of sticklers for the rules – and by those rules, we mean the very strict guidelines laid out by the True Neapolitan Pizza Association aka the Pizza Police who ensure that any member of the Association rolls their dough by hand, tops it with traditional toppings (there’s no pineapple here) and woodfires it in a pizza oven that is as hot as hell, or thereabouts.
