With each pizza hand stretched to order – of course, it’s Portland! – the family owned Apizza Scholls is notoriously difficult to get into. Former bakers Brian and Kim Spangler do things a little differently here, creating a dough that’s more like a ciabatta and blending four cheeses – fresh and whole milk mozzarella and pecorino and parmigiano-reggiano – for their “plain” pie. They have a BYO (Build Your Own) option available and a brunch time pizza featuring egg, bacon and spinach. It’s Portland’s ultimate hangover cure.
