At 800 Degrees they’ve gone to great lengths to “honour the heritage of Old World Italian tradition”, like importing flour from Naples and cooking their pizzas in a wood-burning oven that’s so damn hot it only takes one minute to cook an entire pie. But while the methods might hark back to the 1800s, 800 Degrees’ concept is anything but traditional. You simply pick one of four bases; add proteins, cheeses and vegetables; and your pizza is finished by the time you reach the end of the counter.
