This Melbourne restaurant is run by Johnny Di Francesco whose family hail from Naples – where the pizza margherita was invented. Johnny is the first Australian ever trained in Naples by the True Neapolitan Pizza Association and he’s the association’s Australasian Principal, which means he travels the region ensuring pizzerias are of the highest standard before officially inducting them into the Association. Seriously. He is basically the pizza boss. Oh, and the pizza margherita at 400 Gradi came first place in the 2013 World Pizza Championships in Parma.
