The Team Behind Melbourne’s Huxtaburger Now Make Lobster Rolls

It’s no secret that Melbourne’s Huxtaburger have the burger game down-pat. And now the team behind the famed fast food joint, plus its spring-board fancy restaurant Huxtable, have launched what is bound to be the next hugely hyped Melbourne food spot – Mr Claws.

Mr Claws serves lobster rolls filled with sustainably farmed North American lobster meat mixed with delicious dressings –choose between Sriracha swirled through mayonnaise, buttermilk ranch or miso and wasabi.

I know I’m shellfish, I’m unkind.

The lobster rolls were debuted by the Huxta team – Jeff Wong, Daniel Wilson and Dante Ruaine – at Taste Of Melbourne earlier this month, with 6000 of the buns finding new homes in the bellies of attendees. Demand came in thick and fast, and the restaurant is now operating as a temporary pop-up at 104 Smith Street in Collingwood (beside Huxtaburger), with promises to extend the run over summer.

A lobster roll, potato sticks (that’s a fancy name for chips) and a pickle comes in at $18. At the moment, the exact times and days of service seem a little sporadic (we’re guessing this has to do with the lobster shipping process) but you can watch for all updates on their Facebook page.
