When talking about the best Sydney cafes, it’s inevitable that someone mentions Paramount Coffee Project. The bright, roomy Surry Hills cafe has been a staple on the Sydney coffee scene for years, attracting customers with its promise of a quality brew and brunch.

Paramount Coffee Project says it aims to explore different approaches to coffee, including different styles of roasting and brewing. Fortunately, if coffee isn’t your thing, you can also grab a Golden Gaytime milkshake or a watermelon, lime and coconut crush. Their all-day menu offers an eclectic mix of dishes, including miso ramen, buttermilk fried chicken waffle and a creole jambalaya.

Paramount Coffee Project is open every day from breakfast to lunch.

The Grounds of Alexandria may get the most attention with its beautiful outdoor space and greenery, but The Grounds of the City‘s ’20s-inspired decor and cosy booths make it a great alternative in winter. It’s a blissful haven in the middle of the city, and feels like a tiny weekend squeezed into your week.

For something a little less usual, you and a friend can order a coffee tasting board to try a variety of single origin coffees. If you prefer tea, $8 will get you a bottomless cup of your chosen brew. Wine is also available from 10am, in case you’re having one of those days.

Whatever your chosen beverage, The Grounds of the City will let you enjoy it with a citrus cured salmon tartine before 11.30am, a confit kurobuta pork belly after 11.45am, or a slice of cake whenever you want.

The Grounds of the City is open every day from breakfast to lunch, and for dinner on Tuesday to Sunday.

Where: 500 George Street, Sydney

There’s often a line of patrons waiting for a table at Circa Espresso, and with good reason. Though it started as the closest thing Sydney had to Melbourne’s famous laneway cafes, Circa has since evolved into a standout cafe in its own right. Its seasonal menu isn’t only restricted to serving up wild mushrooms or pan fried barramundi in autumn, but also affects what teas and coffees are on offer.

It’s worth going back to Circa Espresso frequently, not only to grab your favourites while they’re still around, but also to check out what new dishes might have appeared since you last visited. It’s also the perfect excuse to schedule a regular catch up with your friends.

Circa Espresso is open from breakfast to lunch every day.

Where: 21 Wentworth Street, Parramatta

Ruby’s Diner

Ruby’s Diner may be a diner by name, but functionally it operates as one of the best Sydney cafes in the Eastern Suburbs. This isn’t your old school, chequer-floored milkshake diner, though they do serve milkshakes in both chocolate and vanilla. Adorned with a bold, tattoo-like mural stretching across the wall, it feels like a seaside cafe that’s just missing its beach.

Ruby’s Diner focuses on healthy, wholesome food that doesn’t sacrifice flavour. With breakfast served until 3pm, you can have a good lie in before rocking up for a lazy Sunday breakfast of yoghurt panna cotta or Turkish eggs. Pop in after 11.30am, and you’ll also have your pick of the lunch menu, featuring fish curry and Ruby’s beef burger on a milk bun.

Ruby’s Diner is open every day from breakfast to lunch, as well as for dinner from Tuesday to Sunday.

Where: 173–179 Bronte Road, Queens Park

Boon Cafe is a unique spot on the Sydney cafes circuit, where familiar menu items such as single origin coffees and loose leaf teas sit alongside Thai coffee, red tea and nahm tao hoo. This cafe blends together Thai foods and flavours with Western offerings, creating casual yet delightfully different place to grab a snack during day or dinner at night.

In the morning you can try Boon Cafe’s toast with spreads such as pandan custard or house-smoked chilli relish with dried shredded pork, optionally topped with an egg or bacon. Then in the evening, it switches it up to offer delicious Thai dishes from the Isaan region. Go with friends to Boon Cafe and share some pork skewers, a spicy tom yum soup with chicken feet, or a good plate of pad thai.

Boon Cafe is open every day for breakfast, lunch and dinner.

Where: 425 Pitt Street, Haymarket
