Have you ever tasted something so delicious, so mind-bogglingly awesome that you immediately wanted to tell everyone you know about it? You’re not alone. Getting to taste unique offerings from around the world is probably the best part of travel, so there’s no shame in planning a whole trip around one special-looking dish, is there? Because you know in your heart of hearts that you’ve just gotta eat this.
What is it? Bibingka, a delicious rice cake from the Philippines that’s enjoyed over the Christmas season.
What’s in it? The pastry is made from rice flour and coconut milk and is baked in banana leaf-lined terracotta pots. The end result is a soft and spongy cake that’s subtly infused with the unique aroma of roasted banana leaves. The cake is then topped with kesong puti (a locally made white cheese), butter, grated coconut and sometimes pineapple or a salted duck egg. The best part? It’s served at breakfast time. Yummo.
Is it good for you? It’s a lot less sugary than your average Christmas dessert (looking at you Mr Pavlova) so yeah, it’s not so bad.
